Ingredients
  

  • I pd of skinless salmon
  • 1 Tbsp olive oil
  • ½ tsp paprika
  • ½ tsp garlic powder
  • 2 large cucumbers
  • ½ tsp salt
  • 2 cups Cauliflower rice
  • 1/2 cup sour cream
  • 2 Tbsp fresh dill chopped
  • 2 Tbsp lemon juice
  • Salt and pepper to taste

Spicy Mayo:

  • 4 Tbsp avocado oil mayonnaise
  • 2 tsp hot sauce sauce adjust according to your spice preference
  • 2 tsp sesame seeds for garnish
  • Additional garnish ideas chopped parsley sliced avocado, or sliced cherry tomatoes

Instructions
 

  • Place the salmon on a plate. Drizzle with olive oil. Sprinkle paprika, garlic powder and salt and on the salmon.
  • Place a layer of parchment paper on the bottom of the air fryer basket. Place the salmon pieces in the basket making sure not to have them touch. Cook at 400 degrees for 5-6 mins
  • While the salmon is cooking. Cut each cucumber in half lengthwise and scoop out the seeds with a spoon, creating a hollow space in the center. You should have four cucumber “boats.”
  • Place cauliflower rice in a microwave safe bowl. Cook on high for 2.5 to 3 minutes.
  • Add mayo and hot sauce into a small bowl. Mix well.
  • When salmon is finished cooking, flake into bite size pieces. In a medium bowl, combine the flaked salmon, Greek yogurt, fresh dill, lemon juice, salt, and pepper. Mix well to combine all the ingredients.
  • Add the cooked cauliflower to the cucumber boats first.
  • Next add the salmon mixture on top.
  • Drizzle the spicy mayo on top.
  • Add sesame seeds.
  • If desired, top the salmon boats with parsley, cherry tomatoes or avocado slices for added freshness and crunch.
