Dice/rice cut your broccoli heads, then add this to a bowl with all your ingredients except for the olive oil. Mix.
Form the mixture into golf ball size balls – compressing with your hands.
Place oil on your pan and set to medium to high heat. In 3-5 minutes place your broccoli fritter balls on the pan – leaving a few inches between them to allow space to flip.
Cook for roughly 3 minutes on each side or until the sides are nicely browned and firm. 5. Place cooked fritters on a papertoil lined plate to absorb excess oil.
Serve with your favorite dressing like ranch or a few dollops of sour cream. Enjoy!
