Turn oven to 425 F
Slice zucchini ¼ inch slices. Then toss in olive oil and sprinkle with italian seasoning. Place on a parchment covered baking sheet.
Dice onion and mushrooms. (you could also add diced bell peppers or sliced olives – in the final images I will show varieties of the toppings, pesto n some and different colored zucchini)
Place a small dollop of sauce in the middle of each zucchini, then add a pinch of diced vegetables on top and top with a pinch of mozzarella.
Bake for 10-15 minutes or until the cheese melts and is browned.
Add grated parmesan and diced fresh basil on top. Enjoy!
